A premier wine requires time in the cellar and in the bottle. This process should not be rushed. Thus, going forward I will keep my wines in used oak barrels for a minimum of two years. Sadly, this means that there will be no chance to submit the wines in time for the tasting deadlines at the major wine magazines.
I believe in making high-end, cellarable wines, produced with time for slow development on the fine lees.
